INGREDIENTS
2 large eggs
1/2 avocado, sliced
1/4 cup cherry tomatoes, halved
1 tbsp olive oil
1 tbsp fresh cilantro
or parsley, chopped
Salt and pepper to taste
Optional: 1 TBL Feta Cheese
Optional: a pinch of red pepper flakes for spice
INSTRUCTIONS
Heat olive oil in a skillet over medium heat.
Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.).
In a bowl, place the sliced avocado and cherry tomatoes.
Top with the cooked eggs.
Season with salt, pepper, and red pepper flakes if using.
Garnish with fresh cilantro or parsley.
Add a sprinkle of Feta cheese for extra flavor
