INGREDIENTS
2 large eggs
1/2 cup fresh spinach, chopped
1/4 cup cheddar cheese, shredded
1 tbsp butter or olive oil
Salt and pepper to taste
INSTRUCTIONS
Heat the butter or olive oil in a non-stick skillet over medium heat.
Add the spinach and sauté until wilted.
In a bowl, whisk the eggs with salt and pepper.
Pour the eggs into the skillet and scramble until cooked to your liking.
Add the cheese and mix until melted.
Sprinkle a little cheese on top after plated.
Bump up the protein by adding a tablespoon of cottage cheese (for every two eggs) in your scramble. Makes the eggs creamy and gives you added boost of protein!
Creative Options: Add any kind of cheese - Fresh Parm, Provolone, Swiss, Feta.
Toss in Red Pepper Flakes and/or top with siracha for an added flavor blast!
