INGREDIENTS
2 large eggs
2 slices turkey bacon
1 cup fresh spinach or kale, chopped
1 tbsp olive oil or butter
Salt and pepper to taste
INSTRUCTIONS
Cook turkey bacon in a skillet over medium heat until crispy. Set aside.
In the same skillet, add olive oil or butter and sauté spinach or kale until wilted.
In a bowl, whisk the eggs with salt and pepper.
Pour the eggs into the skillet with the greens, stirring constantly until the eggs are fully cooked.
Serve with the turkey bacon on the side OR Chop and combine with eggs at the end of scramble.
