INGREDIENTS
2 large eggs
1/4 cup mushrooms, sliced
1/4 cup spinach, chopped
1/4 cup onions, diced
1 tbsp olive oil or butter
Salt and pepper to taste
Optional: 1/4 cup shredded cheese (cheddar, feta, or mozzarella)
INSTRUCTIONS
Preheat the oven to 350°F (175°C).
In an oven-safe skillet, (Try a Cast Iron Skillet) heat olive oil or butter over medium heat.
Sauté onions and mushrooms until softened.
Add spinach and cook until wilted.
In a bowl, whisk the eggs with salt and pepper.
Pour the eggs over the sautéed vegetables in the skillet.
Cook on the stovetop for 2-3 minutes until the edges start to set.
Transfer the skillet to the oven and bake for 10-12 minutes, or until the frittata is fully set and slightly golden.
Optional: Sprinkle with shredded cheese before baking for extra flavor.
