INGREDIENTS
1 chicken thigh (bone-in, skin-on)
1 cup cauliflower florets
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
Optional: fresh herbs like rosemary or thyme for garnish
INSTRUCTIONS
Preheat the oven to 400°F (200°C).
Season the chicken thigh with salt, pepper, garlic powder, and paprika.
Toss Cauliflower florets in olive oil, salt, pepper, garlic powder and paprika.
Place the chicken and the cauliflower on a baking sheet and bake for 25-30 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
Cauliflower should also roast for 20-25 minutes until tender and slightly browned.
Serve the baked chicken thigh with roasted cauliflower, garnished with fresh herbs if desired.
