INGREDIENTS
2 large eggs
1/4 cup bell peppers, diced
1/4 cup onions, diced
1/4 cup mushrooms, sliced
1/4 avocado, sliced
1 tbsp olive oil or butter
Salt and pepper to taste
INSTRUCTIONS
In a skillet, heat olive oil or butter over medium heat.
OR TRY cooking Omelet in Omelet maker or Microwave with Omelet Maker~
Sauté bell peppers, onions, and mushrooms until softened.
In a bowl, whisk the eggs with salt and pepper.
Pour the eggs over the sautéed vegetables in the skillet.
Cook until the eggs are set, folding the omelet in half.
Serve with sliced avocado on the side.
