INGREDIENTS
1 seedless cucumber, thinly sliced
2 tbsp soy sauce (use low-sodium or coconut aminios for healthier option)
1 garlic clove, minced
1/2 tbsp crunchy spicy hot garlic oil (Optional, and use less if you like it less spicy)
1 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp sesame seeds (optional, for garnish)

INSTRUCTIONS
Thinly slice the seedless cucumber and place in a medium-sized bowl.
In a small bowl, whisk together the soy sauce, minced garlic, hot garlic oil, sesame oil, and rice vinegar.
Pour the sauce mixture over the cucumbers and gently toss until well coated.
Garnish with sesame seeds for a bit of crunch and serve chilled.
