INGREDIENTS
4 oz cooked chicken breast, diced
1/2 avocado, sliced
2 cups mixed greens (arugula, spinach, kale)
1/4 cup cherry tomatoes, halved
1/4 cucumber, sliced
1/4 cup red onion, sliced (Optional)
1 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
INSTRUCTIONS
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
Top with diced chicken breast and avocado slices.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Toss the salad and serve.
Creative Add-Ons: Add Red Pepper Flakes, Garlic and/or Apple Cider or Balsalmic vinegar to the olive oil and lemon before pouring over salad.
Add fresh or dried oregeno or basil.
