INSTRUCTIONS
Season the Chicken Thighs:
Coat the chicken thighs evenly with the carne asada seasoning.
Sear the Chicken (Optional):
For extra flavor, sear the chicken thighs in a hot skillet with a little oil until browned on both sides. If you're short on time, you can skip this step.
Add to Crockpot:
Place the seasoned chicken thighs in the crockpot. Add the beef or chicken broth, enchilada sauce, pepperoncini peppers, and optional onions and garlic.
Cook:
Set the crockpot to low for 4-6 hours or high for 2-3 hours. Chicken thighs cook faster than beef and will become tender quickly.
Shred the Chicken:
Once the chicken is fully cooked and tender, shred it with two forks and mix it back into the sauce for more flavor.
Serve:
Garnish with fresh cilantro and a squeeze of lime juice. Serve in low-carb taco shells, over cauliflower rice, or in bowls for a keto-friendly meal.
