INGREDIENTS
2 large eggs
1/4 cup bell
peppers, diced
1/4 cup spinach, chopped
2 tbsp onions, diced
1/4 cup mushrooms, sliced
2 slices turkey bacon
1 tbsp olive oil or butter
Salt and pepper to taste
INSTRUCTIONS
Cook the turkey bacon in a skillet over medium heat until crispy. Set aside.
Optional: Cook in oven or Airfryer!
In the same skillet, heat olive oil or butter.
Sauté onions, bell peppers, mushrooms, and spinach until softened.
In a bowl, whisk the eggs with salt and pepper.
Pour the eggs into the skillet over the veggies.
Let it cook undisturbed for 1-2 minutes.
Fold the omelet in half and cook until eggs are fully set.
Serve the omelet with turkey bacon on the side.
