INGREDIENTS
4 oz ground turkey
1/2 avocado, sliced
4 large lettuce leaves (Romaine or Butter lettuce works well)
1/4 cup bell peppers, diced
1/4 cup onions, diced
1 tbsp olive oil
1 tsp cumin
1/2 tsp paprika
Salt and pepper to taste
INSTRUCTIONS
Heat olive oil in a skillet over medium heat.
Add onions and bell peppers, and sauté until softened.
Add ground turkey, cumin, paprika, salt, and pepper.
Cook until turkey is browned and fully cooked.
Spoon the cooked turkey mixture into lettuce leaves.
Top with avocado slices.
Wrap the lettuce leaves around the filling and serve.
Optional: Add a little soy sauce and shredded carrots for a more asian zing.
