INGREDIENTS
1 medium spaghetti squash
8 oz ground turkey
1 cup marinara sauce (preferably low-sugar)
1/2 onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
Optional: FRESH 1/4 cup grated Parmesan cheese for garnish
INSTRUCTIONS
Preheat the oven to 400°F (200°C).
Cut the spaghetti squash in half lengthwise and remove the seeds.
Drizzle with olive oil, and season with salt and pepper.
Place the squash halves cut-side down on a baking sheet and bake for 35-40 minutes or until tender.
While the squash is baking, heat olive oil in a skillet over medium heat.
Add the onion and garlic, sauté until softened.
Add the ground turkey and cook until browned.
Stir in the marinara sauce, oregano, and basil. Simmer for 10 minutes.
Once the squash is done, use a fork to scrape out the "spaghetti" strands into a bowl.
Top the spaghetti squash with the turkey marinara.
Garnish with Parmesan cheese if desired, and serve hot.
